A week's worth of meals

One of the things I most admire about my friend Jora is her ability to whip up delicious, wholesome and indulgent meals, seemingly effortlessly. I tend to be one of those whirling dervish cooks who destroys everything in my path and dirties every dish in the kitchen - despite my best intentions, but I've improved quite a bit just by picking up a few of her habits. Like making salad dressing in the vessel where you intend to store it (a simple jar), use one cutting board for everything (as long as you're not cutting meat, and then just do it last), and most of all, keeping it simple - serve just one or two things, no need to serve the tri-corner meal (starch, meat and veg) every single night. She and her husband also do not eat bread with (most of) their meals - a habit we've recently broken.

Another thing Jora does, as you know if you read her excellent blog, Domestic Reflections, is plan her meals on a weekly basis. Since advance planning is key for me right now, I thought it would be a good idea to do the same. These are the dinners I have planned this week. We'll see how it goes - even the best laid plans can sometimes go awry - and in that case, I have some Trader Joes frozen Channa Masala and Ezekiel tortillas waiting in the wings!

Monday
"Cherry Pie" pizza - ricotta, feta, mozzarella, cherry tomatoes and basil on a whole wheat crust (based on this method)
romaine and arugula salad with roasted green beans, walnuts and lemon vinaigrette

Tuesday
Lemon Grilled Chicken (with skinless thighs and legs - and a few tweaks to the marinade)
Roasted Broccolini
sliced heirloom tomatoes with sea salt and olive oil

Wednesday
first day of bread class at culinary school! (assuming I get into the class - I have to crash it!)
pack a "picnic" dinner of leftover cold chicken and arugula salad with goat cheese, beets and walnuts.

Thursday
Thai Corn and Crab Soup (with rice noodles added)
cucumber salad

Friday
Mexican Night

Saturday
out for my mom's birthday

Sunday Supper:
braised pork loin
Rancho Gordo Yellow Indian Woman beans
pickled red onions
feta cheese
sliced avocado
Ezekiel tortillas

Good luck crashing the class! It never gets any easier!! I managed to crash the cake class in the spring. I think the rules have changed a little, you have to get on the waitlist online a week before the class.

I tried the Lemon Chicken recipe you posted (without skin and, like you, with a few modifications) and must say it was fantastic! My husband was excited to have a healthy dinner that actually tasted good, so thanks.
