Their presence, not the amount is what's important because they're there to keep the sugar from crystallizing. Adding double would slow the cooking down a bit, though it would probably also work just fine. (In the past when I've made caramel sauce, which is everything the same except cooking the mixture to temperature - I've just put in enough to moisten everything without measuring.) <br /><br />Law of Attraction - I don't know for sure, but you might try Do it With Icing in Clairemont - they carry lots of candy-making supplies.
